Wear them with a diamond or netherite helmet, chestplate and leggings and you have a full-strength kit that piglins will happily barter with. The second use is Soul Speed, which comes only from piglin bartering in the first place. Because gold's enchantability of 25 is the game's highest, a pair of golden boots is the cheapest way to test whether a Soul Speed book applies cleanly, and the enchantment can be moved onto netherite afterwards. Beyond that, they enchant Feather Falling and Depth Strider as well as any material and simply do not survive long enough to use them. Keep a spare pair in the Nether portal chest. Forgetting them is the single most common reason a bastion trip ends badly.
