Villagers and trading
All 15 villager professions in Java Edition 1.21.4, the workstation block that assigns each one, and the trades actually worth seeking out.
A villager takes its profession from the job site block it claims, and keeps it once you have traded with it. Break the block before that first trade and the villager becomes unemployed again — which is how you reroll a librarian until it offers the enchantment you want.
The most valuable villager in the game. Librarians sell enchanted books, and because a lectern can be broken and replaced to reroll an unemployed villager, you can fish for a specific enchantment at a fixed price.

Buys crops and sells food. A farmer turns a wheat farm into emeralds and is the easiest early source of golden carrots, which are the best food in the game by saturation.

Sells enchanted iron and diamond tools, and buys coal and iron. Useful mainly as an emerald sink early on, and as a way to get a diamond pickaxe before you have found diamonds.

Sells enchanted iron and diamond swords and axes. A master weaponsmith is one of the cheapest routes to an enchanted diamond sword.

Sells iron, chainmail and eventually enchanted diamond armour. Buying a full enchanted diamond set from an armorer is usually far cheaper than enchanting it yourself.

The only renewable source of ender pearls from trading, which matters if you are short of them before the End. Also buys rotten flesh, turning a zombie farm into emeralds.

Buys sticks — which are trivially cheap to make from any wood — and sells arrows, bows and crossbows. The stick trade is one of the fastest early emerald farms in the game.

Buys wool and dye and sells beds, banners and paintings. A sheep farm plus a shepherd is a steady emerald income with almost no setup.

Buys raw meat and sells cooked. Pairs naturally with an animal farm, and the cooked-meat trades are a reasonable food supply before you have a proper farm.

Buys leather and sells leather armour and horse armour. The saddle trade is the reliable way to get one without exploring for chests.

Buys clay and stone and sells decorative blocks — polished stone, terracotta, glazed terracotta and quartz. The best trading source of building materials in quantity.

Sells explorer maps that point at ocean monuments and woodland mansions, which are otherwise very hard to find deliberately. Also the source of item frames and banner patterns.

Buys string and coal and sells cooked fish, campfires and an enchanted fishing rod. The boat trade is a cheap way to move a villager.

Nitwit
Does not trade at all and cannot be given a profession. Nitwits wear a green robe and are identifiable before you waste a workstation on them. They still breed and still count toward village population.
Unemployed
A villager with no workstation claimed. Place a job site block within range and it will take that profession — and because an unemployed villager has no locked trades yet, this is how you reroll for the enchantment you want.
