Overview
In Minecraft 1.21.4, Deepslate Emerald Ore is a stone-family block. It has no crafting recipe — you collect it by mining it where it generates. Expect to wait: its hardness of 4.5 is well above average.
Mine it with an iron pickaxe or better, or you get no drop at all. Instead of dropping itself it yields Emerald. Sixty-four fit in one inventory slot.
The one thing it makes is Emerald.

Properties
Deepslate Emerald Ore has a blast resistance of 3, so a nearby explosion will usually destroy it. It blocks light completely and emits no light of its own. 64 fit in a slot — a full stack. The block is tagged for pickaxes, and only that class gets the speed bonus; everything else mines at bare-hand rate. Broken normally it drops Emerald rather than itself; Silk Touch is what returns the block, and Fortune raises the ordinary drop instead.

Where it generates
Emerald is the rarest ore in the Overworld and almost always generates as a single block rather than a vein, which makes deliberate mining for it slow. It is restricted to mountain biomes and peaks high up around Y=236, so the fastest approach is tunnelling horizontally through a jagged peak rather than digging down. In practice almost no one mines emeralds seriously: villager trading produces them far faster.
Generates only in mountain biomes: windswept hills, windswept gravelly hills, windswept forest, meadow, grove, snowy slopes, jagged peaks, frozen peaks, stony peaks and cherry grove. It does not generate anywhere else at any depth.
